Premium Dry Gin
It starts with rain on the hills above us.
Gentle rain, falling on meadowsweet and bilberry, coursing down through the wild landscape of the Brecon Beacons before seeping slowly underground into the cave system below. By the time we collect it, deep within Dan yr Ogof, it has taken on the minerals of the rock it has travelled through for hundreds of years.
That water is at the heart of this gin.
The making of it
Our Premium Dry Gin is distilled using the London Dry method, bringing together a considered selection of botanicals native to the hills around our farm in Crai, Powys. Juniper and citrus at the core, supported by bilberry, meadowsweet, angelica root, orris, liquorice root and wild sunflower root - botanicals chosen not for novelty, but because they belong to this landscape.
Each botanical was selected to complement the minerality of the cave water. The result is a gin that feels rooted somewhere specific. You can taste where it comes from.
What you will find in the glass
On the nose, sweet orange opens first, followed by earthy juniper and bright bursts of bilberry. Swirl the glass and meadowsweet rises, along with woody notes from the wild sunflower root and angelica, a layered, unhurried effect that rewards a little patience.
On the palate, sweet citrus gives way to touches of marmalade, warm herbal notes and a gentle woody spice. The finish is long and tangy, with bilberry carrying through cleanly to the end. Fresh without being sharp. Elegant without being fussy.
A versatile, well-rounded Welsh craft gin that earns its place on any back bar. Simple in the best possible way.
