Before this gin reaches you, it spends six months inside one of the oldest cave systems in Wales.

Carried by hand into the Angel Passageway deep within Dan yr Ogof - a place of constant cool air, steady darkness and a temperature that never wavers from 10°C, our Cave Aged Gin rests in port-seasoned oak barrels, unhurried, until it is ready.

This is not a process you can speed up. The cave decides the pace.


What the cave does

Underground, something quietly remarkable happens. The cool, consistent conditions of Dan yr Ogof draw out the character of the spirit slowly - vanilla and red fruit from the port casks, warmth from the oak, a depth that only patience produces. The angels' share is taken here too, just as it is in the finest whisky distilleries, only here, it rises into ancient stone rather than open air.

The water that cuts the finished gin is hand-collected from a natural spring deep within the same cave system, mineral-rich, raw from the rock, and carrying the geology of the Brecon Beacons in every drop.

Nothing is rushed. Nothing is replicated.


What you'll find in the glass

The Great Taste Awards described it simply: "Not your everyday gin — certainly one with character and a pleasing twist."

On the nose, citrus and berry give way to gentle floral notes. On the palate, bold vanilla leads, followed by bright citrus and a smooth, lingering warmth from the port cask spice. The mouthfeel is rounded and considered, the kind of gin that rewards a moment's attention.

How to drink it

Over a single large ice cube to appreciate the full complexity as it opens. Or with a premium tonic and a twist of orange, the citrus lifts the vanilla beautifully. If you enjoy aged spirits, try it neat first. It will surprise you.


A note on availability

Cave Aged Gin is produced in small batches. Each batch takes 180 days to complete. When it's gone, the next is already quietly ageing in the dark, but there is always a wait. If this bottle is in stock, it is worth not leaving it too long.
