INTO THE DARK
The gin is carried by hand into the Angel Passageway deep within Dan yr Ogof. Port-seasoned oak barrels are filled and sealed. The cave takes over.
PATIENCE
At a steady 10°C, the spirit rests undisturbed. Vanilla and red fruit draw slowly from the port casks. Oak warmth builds gradually. The angels' share rises into ancient stone. Nothing is rushed.
OUT OF THE CAVE
The gin is brought back into the light by hand. The gin has changed, naturally amber, smooth, complex in a way that only time underground produces.
The aged spirit is blended with mineral-rich water hand-collected from the same cave system. The water that has spent years moving through the rock above becomes part of the finished gin.
Checked, approved and bottled in small batches. Each one numbered. Each one the result of 180 days of patience.
Smooth, amber, warm. Vanilla leads, citrus follows, port cask spice lingers. The kind of gin that rewards a moment's attention.

Cave Aged Gin is produced in small batches. Each one takes 180 days to complete. When it is gone, the next is already quietly ageing in the dark, but there is always a wait.
